The alcoholic fermentation takes place in stainless steel tanks at controlled temperature for about 8 days. Malolactic fermentation takes place in stainless steel followed by a fresh drawing off of the wine. Bottling during the first ten days of March.
Colour: ruby red with purple striping.
Fragrance: intense varietal scents of black pinot. Taste: fresh and round.
Pairings: Large plate of appetizers, meats and cheeses, salt cod and caciucco.
